Grilled Peaches with Kayem Artisan Pineapple Uncured Bacon Sausage
Serves: 4
Prep & Cook Time: 20 Minutes
Ingredients

1 12oz pkg Kayem Artisan Pineapple Uncured Bacon Sausage

1 cup couscous

1 ¼ cups water

2 ea peaches, cut in half, pits removed

Extra virgin olive oil cooking spray

4 each ¾” pineapple rings

½ cup cucumber, diced

¼ cup red onion, diced

1 ½ tbsp fresh mint, chopped and

additional mint leaves for garnish

3 tbsp extra virgin olive oil

1 tbsp fresh lemon juice

1/4 tsp sea salt

¼ tsp black pepper, freshly ground

4 tbsp Farmer’s cheese

 

Instructions
  • Pre-heat grill on medium-high.
  • Boil water in a small sauce pot, add couscous cover pot, turn off heat. Allow to set on the stove for 5 minutes, fluff with a fork. Transfer to a bowl and cool, about 20 minutes. Pre-heat grill to medium-high.
  • Meanwhile, spray peach halves with cooking spray and grill open face on grill for 4 - 5 minutes or until grill mark is set and deeply caramelized. Spray pineapple rings and grill on both sides for 4 - 5 minutes for prominent grill mark. Slice two of the rings in half for final plate presentation; chop the balance of the rings to be tossed in the couscous salad.
  • Once the couscous has cooled, toss with the chopped pineapple, cucumber, red onion, mint, 2 tbsp of olive oil, lemon juice salt and pepper.
  • Grill the sausages 5 - 6 minutes per side, slice on the diagonal about ½" thick.
  • To serve: place a sliced pineapple ring on a dinner plate, top with the couscous salad, about 1 cup per portion, place the sliced sausage pieces around.
  • Top the pineapple with a grilled peach half, a tablespoon of the Farmer's Cheese and a light drizzle of olive oil. Garnish with a mint leaf. Serve immediately.
